Supported by the parents Nanou og Alain Barthélemy, Sebastien Vincenti bought the property in 1991. At that time he had finished his oenological education. The former owner had delivered the grapes to the cooperative and there were no cellars at the estate. 
During 1993-95 Vincenti worked at André Brunel at Les Cailloux in Chateauneuf du Pape. In the cellars here he made the first vintages from Fondrèche.

The domain covers 35 ha. by which 28 ha. are situated around the domain and the rest in Mormoiron. 

The vineyards will be certified agriculture biologique in 2012

A range of  Ventoux wines are made:

Ventoux Fayard
50% Grenache, 30% syrah, 10% Mourvedre and 10% Carignan.

Ventoux Mas Fondrèche O' sud
same wine as Cuvée Favard - for export.

Ventoux Cuvée Nadal
45% Syrah, 45% Grenache and 10% Mourvedre.
Syrah and Mourvedre are aged for 12 months in barriques or demi-muids, Grenache in tank.

Ventoux Cuvée Persia
90% Syrah and 10% Mourvedre from "Le plus beau du domaine".
Aged in barriques for about 12 months without racking.

Ventoux L'Instant Rosé
50% Cinsault, 25% Syrah and 25 % Grenache.

Ventoux Blanc L'Eclat
60% Grenache Blanc and Roussanne plus 40% Clairette.

Ventoux Blanc Cuvée Persia
100% Roussanne. Fermentation in barriques and then again in cement tank.

VDP Nature
50% Mourvedre, 30% Syrah and 20% Grenache.
Aged in tank for 6 months. No SO2 is used.
