In 1996 Bernadette Bayon de Noyer decided to take over a part of her family's vineyards. (The other part is today Domaine du Jas 100 metres away) and created Domaine des Gravennes. A few years later in 2001 her husband joined her. They built cellars and started to make wines and bottle them at the domain.
In 2011 the son Luc Bayon de Noyer returned to the domain having finished his oenological education (BTS) in Beaune in 2008 and after that had worked in Libanon, New Zealand and Nappa Valley in California even as a sommelier at a fine restaurant in Paris.
Luc are now responsible for the wine making. In 2014 his brother Remi has also returned to the domain having worked as an engineer in a design office in Paris.
Since 2014 the 20 ha of vineyards are certified agriculture biologique.
