Ay, Eugène Raspail, founded
a domain in 1854. At that time the two domains Chateau Raspail and the fields of
Domaine Raspail Ay were included in the possessions of Eugène Raspail.
The descendants of Eugène Raspail divided the possessions and Domaine Raspail
Ay became an independent domain.
Today Domaine Raspail Ay is run by Dominique Ay.
The
property owns 18 ha in Gigondas. All of them situated around the property. Rosé and red Gigondas are made.
Red
Gigondas is made from 80 %
Grenache, 15 % Syrah and 6 % Mourvedre.
Ageing at first in old foudres and afterwards in barrels for 18-24 months.
Production 550 hl.
The wine needs some cellaring - maybe 4-7 years after the harvest.
Rosé
Gigondas is made from Clairette and after fermentation is added
press wine from the red Gigondas. Production 15 hl.
