The domain was established in 1995 by Jacques Borrelly.
Until then the fields had been a part of Domain Maby.
Jacques Borelly has now handed the responsibility to his two
daughters Séverine (married Lemoine) and Mélanie.
Séverine is the wine maker and Mélanie takes care of sale and marketing
affairs.
The domain covers 60 ha., 32 ha. Lirac,(Saint Laurent Arbres og
Lirac), 23 ha. Tavel and 5 ha. Vin de Pays (Pujaut)
Since 2011 the conversion into agriculture biologique
has started.

The name of the cuvée refers to the fermenting process reminding of the way a
pearl grows by adding new layers. The grapes from the different varieties reach
maturity successively during a period and when a variety has reached optimal
maturity the must goes in to the same fermentation tank successively.
